Zarda (Rice sweet)
 
One of my favourites; but some people hate this. So watch out if you are in the hater group.
 
 INGREDIENTS

Basmati Rice

250 gm 

Sugar

500 gm

Green Cardamom

Clove

8

Ghee

50 gm

Raisin

25 gm

Cashew (Kaju)

50 gm

Khoya

200 gm

Saffron food color

2 pinch

Rose Water

2 tbsp

 

 

 
 METHOD

 

1. Wash and soak rice for 30 minutes

2. Heat 750 ml water in a pan and add the rice along with saffron food color. Cook until rice becomes semi-soft.

3. Strain and spread over a platter. 

4. Make a thin syrup with sugar and 250 ml water. Keep aside.

5. Heat ghee in a pan and add cardamom, clove, raisin, and cashew.

6. Now add boiled rice and pour syrup. Mix gently.

7. Boil for 5 minutes

8. Reduce flame and simmer for 10-15 minutes

9. Crush the khoya and add to the rice when all moisture is evaporated.

10. Mix gently with a spatula, remove from fire and serve hot.

 

Note 1: If you can't find khoya, or don't know what it is, you can omit it. I don't mind not having it, so neither should you :)

 

Note 2: Saffron food color is just regular food color. You don't really get exact saffron color always, so use orange food color instead.
